Super cheap & easy home baked cookies

We have three people in this house that need a packed lunch daily and that is including my husband.I like them to have something sweet that has been baked by myself (or my daughter) as you can control how sweet it is and it will always be tastier than shop bought and I never want it to be expensive or take a long time.I bake these cookies a lot they are super quick,tasty,cheap and easy,you can vary what you pop in them,I like to use either chocolate,glace cherries,fudge pieces and any dried fruit.They keep for around 3 days,they are never around that long in this house though !!!

So here is my recipe for white chocolate cookies….

You will need :-

100g of white chocolate broken into smallish chunks

125g of unsalted butter

100g granulated sugar

75g of soft brown sugar

1 egg,beaten

150g plain flour

half a teaspoon of baking powder

1 preheat the oven to 190oc/gas mark 5

2 heat the butter gently in a small saucepan over a low heat

3 meanwhile mix the two sugars together in a bowl,then pour in the melted butter and mix well

4 add the beaten egg and mix till well blended

5 sieve the flour and baking powder into the mixture and gently combine

6 then add your chocolate chunks and mix

7 dot heaped pudding spoonfuls onto lined baking trays,keeping in mind the mixture will spread out as it bakes

8 pop into your pre heated oven and bake for 8-10 minutes till golden,then remove cookies to a cooling rack after they have come out of the oven and harden for a minute.

Now all you have to do is wait till they are cool and then make yourself a cup of tea and have a cookie or two !!! The rest pop into a tin and they will keep for a few days.

Oh yes I nearly forgot they taste good with smarties in them and if you have it a teaspoon of vanilla extract, but I don’t always worry about that and some people like a tiny pinch of salt also.Any way happy baking πŸ™‚ Tabitha
