Well the children have broken up for the Summer holidays and there are long and hazy days ahead of us. I am praying for the sun to shine so that we can make use of the beach which is only a 10 minute walk from us and hope that we can have picnics in the countryside. When all else fails we will craft,sew and bake (well the teen will eat what we bake,he won’t craft or sew !!) we have already started baking and my 12 year old baked some tasty scones and has made some tiffin already.
Here are her scones and how to make them.You will need –
– 225g self-raising flour,plus extra for dusting
– 40g caster sugar
– 75g cold diced butter
– 30ml milk,plus extra for glazing
– 1 egg,beaten
Preheat the oven to 220oc or Gas 7
1-lightly grease a baking sheet
2-Sift the flour into a large bowl,stir in the sugar and then gently,using your finger tips rub in the butter till it looks like sand.
3-Add the milk and egg and mix with your hands or wooden spoon to bring it together.
3-Turn out onto a floured surface and gently knead to form a dough
3-Roll out the dough to a thickness of 2.5cm
4-Cut out the scones with a round cutter,we used a glass.Then move onto a greased baking tray and brush with milk and dust lightly with flour.
5-Bake in the oven for 10 minutes or until golden.Remove to a wire tray to cool.
6-Then enjoy filled with jam and cream or like my children did,with chocolate spread…
