Baking flapjack & the comforts of home

I love flapjack,but not the over sweet stuff you can buy in the shops,I mean the lovely oaty,crumbly flapjack you can make at home cheaply and is ideal for lunch boxes and keeps well in a sealed container. So yesterday I made some using some dates I had left over from Christmas and they give the flapjack a lovely toffee flavoured hit.If you wish to make some yourself here is what you will need…

4 tablespoons of golden syrup

200g unsalted butter

100g of soft brown sugar

250g of jumbo oats

100g plain flour

100g of dates stone removed or you can use any dried fruit of your choice and needless to say chocolate works pretty well to !

pre heat oven to 160 0c/gas mark 3

in a medium sized pan add the golden syrup,butter and brown sugar and gently melt

meanwhile in a large bowl mix your oats and flour together then chop your dates and add to the oat mix.

pour your melted ingredients over your dry ingredients and mix well

pour into a greased baking tin about 23cm square and spread the mixture out evenly

pop in a pre heated oven for about 25 minutes or until golden brown,then let cool slightly before chopping into squares and then leave to cool and set

Enjoy with a nice cup of tea/coffee and relax !!

It has started to turn colder here and rather grey looking and I am finding myself  lighting candles during the afternoons just to give a little glow on such gloomy afternoon days. So I was pleased when my mum gave me a bunch of daffodils as they remind me that Spring is around the corner with warmer weather on its way and all the nice things Spring brings with it and the lovely celebration of Easter.
